Negroni kegs and gas

Why batch your negronis

Built-in dilution

Adding water to the batch replaces the stir, so the keg pours it ready to drink.

Perfectly cold

An insulated keg keeps the mix cold without melting ice into it.

Spirit-forward drinks keep

With no fresh juice, a negroni batch holds its flavour for longer than citrus cocktails.

One keg, three classics

Switch to a boulevardier or an Americano without changing the gear.

Batch negroni recipes

Still cocktails pour with nitrogen or nitrous oxide at a low pressure โ€” the recipe book uses 1โ€“3 psi โ€” so the gas pushes the drink out without making it fizzy.

Negroni (1L keg)

  • 300ml gin
  • 300ml Campari
  • 300ml sweet vermouth
  • 100ml water or half a tray of keg-sized ice

Set the regulator to 1โ€“3 psi. Serve over ice with orange peel.

White negroni (950ml)

  • 250ml dry gin
  • 250ml Lillet Blanc
  • 250ml gentian liqueur
  • 200ml water

1โ€“3 psi. Serve over ice with grapefruit zest.

Boulevardier

Swap the gin for bourbon or rye. A common batch ratio is 400ml whiskey, 300ml Campari, 300ml sweet vermouth and 100ml water.

Americano and sbagliato

For an Americano, the recipe book uses 350ml Campari, 350ml sweet vermouth and 300ml soda water under COโ‚‚ at 15 psi. A sbagliato swaps the soda for prosecco โ€” keep it under COโ‚‚ too.

Questions

Frequently asked

What is the negroni ratio?

Equal parts gin, Campari and sweet vermouth. When batching, add about 10% water to replace the dilution from stirring with ice.

What gas should I use for a negroni?

Nitrogen or nitrous oxide at 1โ€“3 psi. It pushes the cocktail out without carbonating it.

How long does a batched negroni last?

With no fresh juice, it keeps well in a cold keg for several days. Vermouth is best within a few weeks of opening.

Can I make a sbagliato on tap?

Yes โ€” mix Campari and sweet vermouth, top with prosecco and keep it under COโ‚‚ so the bubbles hold.

The easiest cocktail to batch
